Tequila has without a doubt won itself an infamous reputation for being at the heart of all the fun and sometimes at the heart of all kinds of bad decisions. Although, what many people don’t know is that they are a variety of agave spirits that are making their way into fancy cocktails and are leaving tequila in the dust in terms of class in favour.
Here is brief explanation of the differences between a couple different popular agave liquors, and where to find them during your stay in the Romantic Zone of Puerto Vallarta:
First off, it’s important to know that tequila is only made from blue agave plants, whereas other spirits undergo a completely different distillation process which ultimately results in very different flavors.
The first alternative spirit we’d like to mention is the ever more popular Mezcal. This liquor can be made from a variety of different agave plants, and obtains its unique smokiness from the process of roasting the heart of the agave plant in a stone-lined oven that is generally set in the ground. After being roasted for a few days it is crushed and fermented, and ultimately becomes a perfectly delicious smoky addition to almost any cocktail.
The second spirit we’d like to mention is raicilla. Not only because raicilla is native to Jalisco, but because it really is one of the most deliciously smooth alternatives to tequila - whether you are drinking it in a cocktail or on its own.
The process of making raicilla is very similar to that of mezcal and it can also be made from a variety of different agave plants, although the hearts are generally roasted in above-ground ovens so it doesn’t end up with that smoky flavor that mezcal has. Raicilla has earned itself the nickname of “Mexican Moonshine” due to being previously sold without government approval. This nickname is also very suiting because raicilla is known to be extremely powerful stuff.
